CV talks with Zlatan (Zack) Lakic Interview with the Western Canadian Barista Champion of 2005

What inspired you to become a Barista?
It was the concept behind Caffe Artigiano, the love of coffee by Vince and Sammy Piccolo who completly inspired me to become a professional Barista.
How long did you train for the Western Canadian Championship? 2 months. After 5 days a week at work, I then packed 5 lb Black Cat, 2 gallons of milk and headed to the training facility and practiced until 9 or 10pm.
Where and when was the first Barista championship you competed in? It was in Seattle 2002, 1st Latte Art Championship, I won that one and came back a year later in the same competition and took 2nd place behind Morris. Then in 2003 in the Canadian Barista Championship I took 4th place and in 2004 Canadian Barista Championship I was 4th place.
How did it feel to win the Barista Competition in Vancouver, both on a personal and professional level? It felt great. When you train and put so much time and effort in to it and then you win, it feels great.
Describe the drink you created as your "custom" drink as you won this year's Western Canadian Barista Championship & how long did it take to create your signature drink?
Romanza
1. Semi-Sweet Dark Chocolate
2. Sour Cherries sauce
3. 1oz Espresso
4. Vanilla Chantilly
It took about 2 full weeks of cooking, testing, trying and getting everything to fit together. You see when you have 3 ingredients and 1oz espresso, I have to be careful of how much my ingredients I can put to make sure that my taste balance is perfect.
What is your own personal favorite coffee? I love to drink Ristretos and short Machiatos, but when it comes to drip coffee I love Kenya and Harrar, they are my favourite.

What advice/tips do you have for Baristas just getting started? Be patient, organized and listent to your trainer when they are trying to make the best of you.
What did you do before becoming a Barista? I was a dishwasher, busboy and a waiter.
Do you have any mentors in the coffee industry? and if so who and why? Yes, Vince and Sammy Piccolo. They are so passionate about coffee, when you are around then and work with them that make's me happy and willing to do more and learn more about coffee everyday.
What interests do you have outside of the coffee business? I love sport and competition, so I am either playing soccer or basketball.
