Types of Chocolate

Carob
Often used as a low-calorie substitute, carob is nothing more than the
mashed fruit of a Mediterranean pine tree.
Cocoa
The powdered form of chocolate, cocoa is made by removing most of the cocoa
butter from chocolate by hydraulic pressure. This process removes nearly all
the fat, making cocoa a popular ingredient in low-fat brownies and cookies.
Semisweet chocolate
Most easily recognized as "chocolate chips," semisweet chocolate is a blend
of unsweetened chocolate, sugar, cocoa butter and flavorings.
White chocolate
White chocolate contains extra milk products, giving it a taste similar to
milk chocolate, so the misnomer has stuck.
Milk chocolate
Nectar of the gods, milk chocolate is the sweetest of all types. Milk
powder, sugar and flavorings (vanilla usually) are blended with cocoa butter
to give it that texture we all know and love.
Ganache
If you see something on a menu topped with this, order it. The thick,
chocolate glaze is made with a combination of the freshest cream and the
finest chocolate.
